8 slices of Kelly’s Black Pudding
8 tablespoons of Kelly’s Kitchen home-made tomato relish
one long crusty baguette
8 slices St. Tola organic goats cheese
1 tablespoon rapeseed oil
Preheat the oven to 180o.
Heat the rapeseed oil in a non-stick frying pan. Cook the Kelly’s Black Pudding for approximately 2 minutes on each side.
Cut the baguette in half lengthwise and smother with tomato relish.
Next cut the puddings in half, place on top of the relish and cover liberally with the St. Tola cheese. Place the baguette halves in the preheated oven for 5-6 minutes or until the cheese is bubbling.
To serve, cut each into three pieces and serve with a seasonal salad.
